2 boxes Tabbouleh mix
2 cups boiling water
2 lg tomatoes chopped
4 green onions chopped
1 can black beans, rinsed and drained
1/4 cup fresh cilantro chopped
1/2 teaspoon grated lime rind
1/4 cup fresh lime juice
2 tbsps olive oil
1/2 teaspoon ground cumin
1/4 teaspoon cayenne
1 can no salt added corn kernels drained
1/2 cup shredded carrots
Pour hot water over tabbouleh and its seasonings, and let stand till cool. Add remaining ingredients, toss and chill at least 6 hours.
